Awarded Best City Boutique Hotel Gourmnet Traveller 2013, The Islington is a luxurious boutique hotel, just outside of Hobart’s CBD built in 1847. The country style kitchen is the perfect place to enjoy the freshest local ingredients from around Tasmania. The focus is on seasonal, local and organic produce where possible, and the menu changes regularly. One day guests may be treated to line-caught deep sea fish and freshly shucked oysters, or perhaps a rack of tender spring lamb with wild mushroom ragu and Tasmanian truffles. The antique Biedermeier dining table seats 10 guests for a home-cooked breakfast or a private dinner party catered by the hotels resident chef.
