Henry’s is the Signature Restaurant for The Henry Jones Art Hotel where South African born Executive Chef Andre Kropp spearheads a young troop of top chefs to create innovative contemporary Australian dishes using the best local produce. Think liquorice braised Dorper Lamb leg with Jerusalem artichoke and caramelized onion puree to the likes of roasted pork shoulder with swede, pickled rhubarb puree, sage and apple dressing.
